10 Minute Easy Banana Bread

A quick and moist banana bread recipe using very ripe bananas, perfect for a busy day.

Ingredients

  • 3 very ripe bananas, mashed (about 1 to 1 and a quarter cups)
  • 1 egg
  • 1/3 cup melted butter (or neutral oil)
  • 1/2 cup sugar (or 1/3 cup if bananas are very sweet)
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 and 1/2 cups all-purpose flour
  • Optional: 1/2 teaspoon cinnamon, chocolate chips, or chopped walnuts

Instructions

  1. Preheat oven to 350°F and grease a standard loaf pan.
  2. Mash bananas in a bowl until mostly smooth.
  3. Whisk in egg, melted butter, sugar, and vanilla.
  4. Sprinkle baking soda and salt over the mixture and stir in.
  5. Add flour and stir just until there are no dry streaks.
  6. Pour the mixture into the greased pan and bake for 50 to 60 minutes, until a toothpick comes out with a few moist crumbs.
  7. Cool in the pan for 10 minutes, then lift out and cool completely before slicing.

Notes

For best results, use very ripe bananas, avoid overmixing, and let the loaf rest before slicing.
