Authentic Greek Potatoes

Crispy and zesty, these Authentic Greek Potatoes are the perfect side dish for any meal, enhanced with lemon juice and olive oil.

  • 2.53 lbs Russet or Yukon Gold Potatoes
  • 1/2 cup (120ml) Freshly Squeezed Lemon Juice
  • 1/2 cup (120ml) Good Quality Extra Virgin Olive Oil
  • 46 cloves Garlic, minced
  • 2 tablespoons Dried Oregano
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 cup (120ml) Vegetable or Chicken Broth
  • Fresh Parsley or Oregano, for garnish (optional)

Instructions

  1. Wash and scrub the potatoes. Peel if desired. Cut them into consistent 1-1.5 inch wedges or 1-inch chunks.
  2. Soak the cut potatoes in cold water for 30-60 minutes to remove excess starch. After soaking, drain thoroughly and pat them extremely dry with clean towels; this step is crucial for crispiness.
  3. Preheat your oven to 400°F (200°C) with an oven rack in the middle position.
  4. Whisk together the lemon juice, olive oil, minced garlic, dried oregano, salt, and black pepper in a very large bowl. Add the thoroughly dried potato pieces and toss vigorously to coat every piece evenly with the marinade.
  5. Spread the marinated potatoes in a single layer on a large baking sheet or roasting pan, making sure not to overcrowd them. Use two sheets if needed to give each piece space.
  6. Roast for an initial 20-25 minutes without disturbing the potatoes.
  7. Carefully remove the pan from the oven. Using a sturdy spatula, flip the potato pieces. Pour 1/2 cup of vegetable or chicken broth (or water) directly into the baking pan around the potatoes. Return to the oven.
  8. Continue roasting for another 25-35 minutes, flipping the potatoes every 10-15 minutes for even browning. Scrape up any delicious browned bits from the bottom of the pan and mix them back in.
  9. Remove the baking sheet(s) from the oven once done, and let the Greek Potatoes rest in the pan for about 5-10 minutes, uncovered. Garnish with fresh chopped parsley or oregano before serving.

Notes

These potatoes pair well with grilled chicken, fish, or roasted vegetables. For added flavor, drizzle them with a bit more lemon juice and olive oil just before serving.
