Best Cucumber Pasta Salad

A fresh and simple salad that’s light and easy to make, perfect for warm days.

Ingredients

  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, finely chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Fresh herbs (like dill or parsley) for garnish

Instructions

  1. In a large bowl, combine cooked pasta, cucumber, cherry tomatoes, red onion, and feta cheese.
  2. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  3. Pour the dressing over the pasta salad and toss to coat evenly.
  4. Garnish with fresh herbs and serve chilled.

Notes

Chill the salad for at least 30 minutes for the best flavor. If you want to preserve crunchiness, add the dressing just before serving.
