Blackberry Velvet Cake

A delightful and rich cake combining blackberries with creamy frosting, perfect for any special occasion.

  • 2 1/2 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 1 cup unsalted butter, room temperature
  • 3 large eggs, room temperature
  • 1 cup buttermilk, room temperature
  • 1 1/2 cups fresh blackberries
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon lemon zest (optional)
  • Purple food coloring (a few drops, optional)
  • 1 cup unsalted butter, room temperature (for frosting)
  • 3 1/2 cups powdered sugar
  • 1 cup fresh blackberries (reduced to 1/3 cup puree)
  • 4 ounces cream cheese, room temperature
  • 1 teaspoon pure vanilla extract (for frosting)
  • Pinch of salt (for frosting)
  • Extra fresh blackberries (for decoration)
  • Edible flowers (optional)
  • Fresh mint leaves (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. Set aside.
  2. Beat the butter and sugar together in a large bowl until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the buttermilk, vanilla extract, and lemon zest if using.
  3. Whisk together flour, baking powder, baking soda, and salt in another bowl. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  4. Fold in the blackberries and purple food coloring if desired. Divide the batter between prepared pans.
  5. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow cakes to cool in the pans for 10 minutes before transferring to wire racks.
  6. Beat the cream cheese and butter together in a medium bowl until creamy. Gradually add the powdered sugar, blackberry puree, vanilla extract, and a pinch of salt. Mix until smooth and fluffy.
  7. Place one layer of cake on a serving plate. Spread a layer of frosting on top. Place the second layer of cake on top and frost the top and sides of the cake.
  8. Decorate with extra blackberries, edible flowers, and fresh mint leaves if using.
  9. Slice the cake and serve it on plates, optionally adding extra blackberries on the side.

Notes

Use room temperature ingredients for a smoother batter. Don’t overmix to keep the cake light and fluffy.
