  • 2 cups mixed salad greens
  • 1 cup fresh blueberries
  • 1/2 cup shelled pistachios
  • 1/4 cup crumbled feta cheese
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Start by washing the mixed salad greens and patting them dry. Place them in a large salad bowl.
  2. Add the fresh blueberries, shelled pistachios, crumbled feta cheese, and thinly sliced red onion to the greens.
  3. In a small bowl, whisk together the extra virgin olive oil, honey, balsamic vinegar, Dijon mustard, salt, and black pepper until well combined. This will be your dressing.
  4. Drizzle the dressing over the salad just before serving. Toss everything gently to ensure the ingredients are well mixed and coated with the dressing.

Notes

Use fresh ingredients for the best flavor and nutrition. For a sweeter salad, add more honey to the dressing.
