  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Start by washing the salad greens and blueberries thoroughly. Pat them dry.
  2. Mix the extra virgin olive oil, honey, balsamic vinegar, Dijon mustard, salt, and black pepper in a small bowl. Whisk until well combined.
  3. Combine the mixed salad greens, blueberries, and red onion in a large salad bowl. Pour the dressing over the salad and toss gently to coat everything evenly.
  4. Top with pistachios and crumbled feta cheese.
