Caprese Orzo Salad

A fresh and vibrant salad combining classic Italian flavors with orzo pasta, perfect for warm weather.

Ingredients

  • 8 ounces orzo pasta
  • 2 cups cherry tomatoes, halved
  • 1 cup fresh mozzarella balls, halved
  • 1/2 cup fresh basil leaves, chopped
  • 1/4 cup balsamic vinaigrette
  • Salt and pepper to taste

Instructions

  1. Cook the orzo pasta according to package instructions. Drain and let it cool.
  2. In a large bowl, combine the cooled orzo, cherry tomatoes, mozzarella, and basil.
  3. Drizzle with balsamic vinaigrette and toss gently to combine.
  4. Season with salt and pepper to taste.
  5. Serve immediately or refrigerate until ready to serve.

Notes

Best served fresh but can be refrigerated for up to 3 days. Add balsamic vinaigrette just before serving.
