Chicken Dumpling Soup

A comforting and quick Chicken Dumpling Soup, perfect for chilly days, packed with vegetables and flavors.

Ingredients

  • 2 cups rotisserie chicken, shredded
  • 1 can (10.5 oz) cream of chicken soup
  • 4 cups chicken broth
  • 1 cup refrigerated biscuit dough
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup peas
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Combine chicken broth, cream of chicken soup, carrots, celery, peas, and thyme in a large pot. Bring to a simmer over medium heat.
  2. While the soup is simmering, cut the refrigerated biscuit dough into quarters.
  3. Add the shredded rotisserie chicken to the pot and stir well.
  4. Drop the biscuit pieces into the simmering soup.
  5. Cover and cook for about 10-15 minutes, or until the dumplings are cooked through.
  6. Season with salt and pepper to taste. Serve hot, garnished with fresh herbs if desired.

Notes

For extra flavor, sauté the carrots and celery in olive oil before adding the liquids. Add other vegetables like corn or green beans if preferred.
