Chicken Salad with Grapes and Nuts

A light and refreshing chicken salad featuring tender chicken, sweet grapes, and crunchy nuts, perfect for lunch or dinner.

  • 4 cups cooked chicken, shredded or cubed (cold)
  • 1 cup red grapes, halved and patted dry
  • 0.5 cup celery, finely diced and dried
  • 0.25 cup green onions, sliced
  • 0.75 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh lemon juice
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp fresh dill, chopped
  • 0.5 cup toasted pecans or slivered almonds

Instructions

  1. In a large bowl, combine the cooked chicken, halved grapes, diced celery, and sliced green onions.
  2. In a separate bowl, mix together the mayonnaise, Dijon mustard, lemon juice, salt, black pepper, and chopped dill.
  3. Pour the dressing over the chicken mixture and stir gently until everything is well coated.
  4. Before serving, add the toasted pecans or slivered almonds for crunch.

Notes

Use rotisserie chicken for a quick option. Feel free to substitute grapes with other fruits like apples or dried cranberries. Adjust the seasoning to your taste.
