Chocolate Zucchini Bread

A delightful treat that combines the richness of chocolate with the subtle sweetness of zucchini. This moist and flavorful bread is perfect for satisfying chocolate cravings and sneaking in some veggies.

  • 1 cup grated zucchini
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Combine the grated zucchini, oil, sugar, eggs, and vanilla extract in a mixing bowl. Mix well.
  3. Whisk together the flour, cocoa powder, baking soda, baking powder, and salt in another bowl.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fold in the chocolate chips if using.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Squeeze out excess moisture from the grated zucchini to prevent the bread from becoming too wet. Optionally, add nuts or seeds for extra flavor.
