Coconut Chicken Rice Bowl

A delightful dish combining tender chicken, creamy coconut milk, and fragrant spices for a satisfying one-bowl meal.

  • 1 lb boneless, skinless chicken breasts
  • 1 can coconut milk
  • 1 tbsp soy sauce (or tamari)
  • 1 tsp lime juice
  • 2 cloves garlic
  • 1 tsp ginger
  • 2 cups cooked rice
  • 1 tbsp vegetable oil (or coconut oil)
  • Salt and pepper to taste
  • Fresh cilantro or green onions for garnish

Instructions

  1. Cut the chicken into bite-sized pieces and season with salt and pepper.
  2. In a large skillet, heat vegetable oil over medium heat. Add the chicken and cook until golden brown, about 5-7 minutes.
  3. Mince the garlic and ginger, and add them to the skillet. Cook for another 1-2 minutes until fragrant.
  4. Pour in the coconut milk, soy sauce, and lime juice. Mix well and let it simmer for about 10 minutes.
  5. Serve the coconut chicken over cooked rice and top with fresh cilantro or green onions.

Notes

For extra flavor, marinate the chicken in lime juice, soy sauce, and spices for 30 minutes before cooking. Customize with vegetables or substitute chicken with shrimp or tofu.
