Creamy Garlic Chicken Thighs

A comforting and flavorful dish featuring tender chicken thighs in a rich cream sauce with garlic.

  • 8 bone-in, skin-on chicken thighs (about 2 lbs)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 2 tbsp unsalted butter
  • 6 cloves garlic (minced)
  • 1/2 cup low sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated parmesan cheese
  • 2 tbsp fresh parsley (chopped, for garnish)

Instructions

  1. Pat the chicken thighs dry with paper towels and season with salt, pepper, and garlic powder.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken thighs skin-side down for 6-8 minutes until golden brown and crispy. Flip them and cook for another 5-6 minutes until cooked through. Remove the chicken and set aside.
  3. Reduce the heat to medium and add butter to the skillet. Once melted, add minced garlic and cook for 30 seconds until fragrant.
  4. Pour in the chicken broth, scrape the browned bits from the skillet, bring to a simmer, and reduce for 3-4 minutes.
  5. Stir in the heavy cream and simmer for 2-3 minutes to thicken. Add parmesan cheese and stir until melted and smooth.
  6. Return the chicken thighs to the skillet, spoon sauce over them, garnish with parsley, and serve hot.

Notes

For a lighter version, use skinless chicken thighs or chicken breasts and add vegetables like spinach or mushrooms to the sauce.
