Creamy Lemon Parmesan Pasta Salad

A refreshing and flavorful pasta salad that combines zesty lemon and creamy Parmesan, perfect for warm weather gatherings.

  • 1 pound rotini pasta
  • 1 cup Italian dressing
  • Juice of 2 lemons
  • 1 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder

Instructions

  1. Boil the rotini pasta according to the package instructions, usually about 10–11 minutes.
  2. Drain the pasta and rinse it under cold water to cool it down. Allow it to drain well.
  3. Mix together the Italian dressing, lemon juice, grated Parmesan cheese, chopped parsley, garlic powder, kosher salt, black pepper, and onion powder in a large bowl.
  4. Add the cooked pasta to the mixing bowl and stir until the pasta is fully coated with the dressing mixture.
  5. Serve immediately, or chill it in the refrigerator for a couple of hours to let the flavors develop. Stir well before serving if chilled.

Notes

For extra creaminess, consider adding mayonnaise or Greek yogurt. You can also add vegetables like cherry tomatoes or bell peppers for added crunch.
