Creamy Pasta Salad

A light and refreshing creamy pasta salad perfect for picnics and barbecues.

Ingredients

  • 8 ounces pasta (fusilli or rotini)
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup bell peppers, diced
  • Salt and pepper to taste
  • Fresh herbs (like parsley or dill) for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. In a large bowl, combine mayonnaise, Dijon mustard, and apple cider vinegar. Mix until smooth.
  3. Add in the cooked pasta, cherry tomatoes, cucumber, red onion, and bell peppers. Stir until well combined.
  4. Season with salt and pepper to taste.
  5. Chill in the refrigerator for at least 30 minutes before serving.
  6. Garnish with fresh herbs before serving. Enjoy!

Notes
