Creamy Pasta Salad

A quick and cool pasta salad made with a creamy dressing and fresh veggies, perfect for lunch or a picnic.

Ingredients

  • 8 ounces of pasta (e.g., rotini or penne)
  • 1 cup of mayonnaise
  • 1/2 cup of sour cream
  • 1 teaspoon of Dijon mustard
  • 1 cup of cherry tomatoes, halved
  • 1 cup of cucumber, diced
  • 1/2 cup of red onion, diced
  • Salt and pepper to taste
  • Fresh herbs (e.g., parsley or basil) for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. Mix together the mayonnaise, sour cream, and Dijon mustard in a large bowl.
  3. Add the cooked pasta, cherry tomatoes, cucumber, and red onion to the bowl.
  4. Stir to combine and season with salt and pepper to taste.
  5. Chill in the refrigerator for at least 30 minutes before serving.
  6. Garnish with fresh herbs before serving.

Notes

For added flavor, chill for 1-2 hours, and use fresh herbs. This salad can be stored for up to 3 days.
