Creamy Potato Hamburger Soup

A warm and comforting soup with beef and potatoes, perfect for chilly days.

Ingredients

  • 1 pound ground beef
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Optional: cheese and green onions for topping

Instructions

  1. Add the ground beef, diced potatoes, chopped onion, sliced carrots, beef broth, minced garlic, salt, and pepper to a slow cooker.
  2. Cook on low for 360-480 minutes or high for 180-240 minutes, until the vegetables are tender and the beef is cooked.
  3. Stir in the heavy cream and cook for an additional 30 minutes.
  4. Serve hot, garnished with cheese and green onions if desired.

Notes

For a thicker soup, mash some of the potatoes once they are cooked. Leftovers can be stored in the refrigerator for 3-4 days or frozen for up to 2-3 months.
