Creamy Potato Salad

A refreshing and creamy potato salad that’s perfect for picnics, barbecues, and family gatherings.

Ingredients

  • 2 pounds of potatoes
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1/2 cup chopped celery
  • 1/2 cup chopped red onion
  • 1/4 cup chopped parsley
  • Salt and pepper to taste
  • Paprika for garnish

Instructions

  1. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let cool.
  2. In a large bowl, mix together mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper.
  3. Peel and chop the cooled potatoes into bite-sized pieces and add to the bowl.
  4. Stir in celery, red onion, and parsley until well combined.
  5. Taste and adjust seasoning if necessary.
  6. Chill in the refrigerator for at least 60 minutes before serving.
  7. Garnish with paprika before serving.

Notes

Use a mix of waxy and starchy potatoes for the best texture. Adjust the mayonnaise and mustard to taste.
