Crock Pot Beef and Broccoli

A simple and delicious Crock Pot dish featuring tender beef and fresh broccoli, perfect for family dinners and meal prep.

Ingredients

  • 2 pounds beef chuck roast, cut into bite-sized pieces
  • 4 cups broccoli florets
  • 1 cup beef broth
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon minced garlic
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Cooked rice, for serving

Instructions

  1. In a slow cooker, combine beef chunks, beef broth, soy sauce, brown sugar, garlic, ginger, salt, and pepper.
  2. Cover and cook on low for 360-480 minutes or high for 180-240 minutes until the beef is tender.
  3. In the last 30 minutes of cooking, add broccoli florets and stir to combine.
  4. In a small bowl, mix cornstarch with a little water to create a slurry and stir into the slow cooker to thicken the sauce.
  5. Serve hot over cooked rice.

Notes

For extra flavor, add sesame seeds on top when serving. Store leftovers in an airtight container for up to 3 days.
