Crock Pot Fiesta Chicken

A delicious and easy dish that brings a burst of flavors to your dinner table, perfect for busy days.

Ingredients

  • 4 chicken breasts
  • 1 packet ranch seasoning
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 can diced green chilies
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Sprinkle the ranch and taco seasoning over the chicken.
  3. Add the black beans, corn, diced tomatoes, and green chilies on top.
  4. Season with salt and pepper to taste.
  5. Cover and cook on low for 360 minutes or high for 240 minutes.
  6. Once the chicken is cooked through, shred it with two forks and stir everything together.
  7. Serve with rice or tortillas.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Can be frozen for up to 3 months.
