Crock Pot Swamp Potatoes

A delicious and comforting dish made with potatoes, vegetables, and creamy goodness, perfect for any meal.

  • 2 lbs potatoes, peeled and diced
  • 1 onion, chopped
  • 1 bell pepper, diced
  • 1 cup corn
  • 1 cup chicken broth
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1/2 cup sour cream
  • 1 cup shredded cheese (optional)

Instructions

  1. Place the diced potatoes, chopped onion, diced bell pepper, and corn in the Crock Pot.
  2. Pour the chicken broth over the vegetables.
  3. Sprinkle garlic powder, paprika, salt, and pepper over the mixture.
  4. Stir to combine all ingredients.
  5. Cover and cook on low for 360 minutes (6-8 hours) or on high for 240 minutes (3-4 hours), until the potatoes are tender.
  6. Once cooked, stir in sour cream and top with shredded cheese if desired.
  7. Serve warm.

Notes

For added flavor, try adding other vegetables like carrots or green beans. Use russet or Yukon gold potatoes for a fluffier texture.
