Crock Pot Taco Rice Soup

A comforting soup that combines all the flavors of your favorite tacos into a warm and hearty dish, perfect for any day of the week.

  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 4 cups vegetable broth
  • 1 cup cooked chicken or ground beef (optional)
  • 1 cup shredded cheese (for topping)
  • Sour cream (for topping)
  • Chopped green onions (for topping)

Instructions

  1. Combine the cooked rice, black beans, corn, diced tomatoes, taco seasoning, and vegetable broth in a slow cooker.
  2. Add cooked chicken or ground beef if using.
  3. Stir well to combine all the ingredients.
  4. Cover the slow cooker and cook on low for 360-480 minutes or on high for 180-240 minutes.
  5. Serve hot, topped with shredded cheese, sour cream, and chopped green onions if desired.

Notes

For a spicier version, add some chopped jalapeños or a pinch of cayenne pepper. This soup can be served as an appetizer or a main dish.
