Crockpot Chicken Fried Rice

A delicious and easy meal made in a slow cooker, perfect for busy weeknights.

Ingredients

  • 2 cups long-grain white rice, rinsed
  • 1 ½ lbs chicken breast, cut into bite-size pieces
  • 3 cups low-sodium chicken broth
  • 1 cup frozen peas and carrots
  • ½ cup diced onion
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp ground ginger
  • 2 large eggs, scrambled (optional)
  • Green onions, sliced (for garnish)

Instructions

  1. Lightly grease the crockpot insert.
  2. Add the rice, chicken, broth, onion, garlic, soy sauce, sesame oil, and ginger. Stir to combine.
  3. Cook on high for 150 – 180 minutes or low for 240 – 300 minutes, until the rice is tender and the chicken is fully cooked.
  4. Stir in peas and carrots during the last 30 minutes of cooking.
  5. Fold in scrambled eggs if you’re using them.
  6. Fluff the rice with a fork, garnish with green onions, and serve.

Notes

Rinse the rice thoroughly to prevent stickiness. You can substitute proteins or add various vegetables.
