Crockpot Coconut Lime Chicken

  • 2 lbs boneless skinless chicken breasts or thighs
  • 1 can (13.5 oz) full-fat coconut milk
  • 1/2 cup chicken broth
  • 1/4 cup fresh lime juice
  • 1 tablespoon lime zest
  • 3 cloves garlic, minced
  • 1/2 medium onion, finely chopped
  • 1 tablespoon olive oil
  • 1 teaspoon ground ginger
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped fresh cilantro (optional for garnish)
  • Cooked rice for serving (optional)

Instructions

  1. Prepare the ingredients by trimming the chicken, mincing the garlic, chopping the onion, and squeezing fresh lime juice.
  2. Place the chicken at the bottom of the crockpot.
  3. Add the chopped onion, minced garlic, ginger, paprika, salt, and black pepper over the chicken.
  4. Pour the coconut milk and chicken broth evenly over the chicken.
  5. Add the fresh lime juice and lime zest to the crockpot and gently mix to combine the flavors.
  6. Cover and cook on LOW for 300-360 minutes or HIGH for 180-240 minutes until the chicken becomes tender and fully cooked.
  7. Once cooked, shred the chicken using two forks or leave the pieces whole depending on preference.
  8. Stir the chicken into the creamy coconut lime sauce so it absorbs the flavor.
  9. Taste the sauce and adjust seasoning if needed.
  10. Serve the crockpot coconut lime chicken warm over rice or with vegetables and garnish with fresh cilantro.
