A refreshing and healthy salad combining crisp cucumbers and creamy avocado, perfect for summer days.

Ingredients

  • 1 ripe avocado, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Combine the diced cucumbers, creamy avocado, thinly sliced red onion, and fresh cilantro in a large mixing bowl.
  2. Whisk together the lime juice, olive oil, salt, and pepper in a small mixing bowl to create the dressing.
  3. Pour the dressing over the salad and gently combine all the ingredients.
  4. Serve immediately or refrigerate briefly, ensuring it’s covered tightly.

Notes

Best enjoyed fresh but can be stored for a day or two in an airtight container. For optimal flavor, mix dressing just before serving.
