Cucumber Dill Rotisserie Chicken Salad

A quick, fresh, and easy salad that combines rotisserie chicken with cool cucumber and creamy Greek yogurt, perfect for lunch or a light dinner.

  • 3 cups rotisserie chicken, chopped and chilled
  • 2/3 cup full-fat Greek yogurt
  • 1 tablespoon dijon mustard
  • Juice of 1/2 lemon
  • 1/3 cup green onion, chopped
  • 3/4 cup seedless cucumber, peeled and chopped
  • 1/2 cup celery, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon (dried) dill
  • 1 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Chop and chill the rotisserie chicken before you start.
  2. Prepare the vegetables and herbs: peel and chop the cucumber, chop the green onion, celery, and parsley.
  3. In a large bowl, add the chicken, yogurt, mustard, and lemon juice. Stir to combine.
  4. Add the cucumber, green onion, celery, parsley, dill, salt, and pepper. Stir until everything is mixed and coated.
  5. Taste and adjust salt or lemon if needed. Chill for 10–20 minutes for the flavors to blend, or serve right away.

Notes

Chill the chicken to keep the salad cold and fresh. Use seedless cucumber to avoid extra water and for a milder texture.
