A fresh, light salad with shrimp and cucumbers, dressed in a creamy lime yogurt sauce, perfect for quick meals or hot days.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 large cucumbers, diced
  • 4 green onions, chopped
  • 1/4 cup fresh herbs (like dill or parsley)
  • 1/2 cup Greek yogurt
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Instructions

  1. Cook or thaw the shrimp if needed, then let it cool.
  2. Chop the cucumbers, green onions, and herbs.
  3. Make the dressing by mixing Greek yogurt, lime juice, salt, and pepper.
  4. Put the cucumbers, green onions, and herbs in a large bowl.
  5. Add the shrimp and pour the dressing over.
  6. Toss gently to mix. Chill before serving if you like.

Notes

Pat shrimp and cucumbers dry to maintain creaminess of the dressing. Chill ingredients before mixing for a crisp result.
