Easy Crockpot Cheesy Crack Beef Pasta

A comforting and hearty cheesy beef and pasta dish cooked effortlessly in a crockpot. Perfect for busy weeknights and family gatherings.

  • 1 lb ground beef
  • 8 oz cream cheese, cubed
  • 1 (1 oz) packet ranch seasoning mix
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 3 cups beef broth
  • 12 oz rotini or penne pasta
  • Salt and pepper to taste
  • Chopped green onions or parsley for garnish (optional)

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain any excess fat.
  2. Transfer the beef to a crockpot. Add cream cheese, ranch seasoning, cheddar cheese, sour cream, and beef broth. Stir gently to combine.
  3. Cover and cook on LOW for 3–4 hours, stirring once or twice if possible.
  4. Add the uncooked pasta in the last 30–40 minutes of cooking. Cover and cook until pasta is tender, about 30–40 minutes.
  5. Serve warm and garnish with chopped green onions or parsley if desired.

Notes

For added heat, consider incorporating diced jalapeños or red pepper flakes. Substitute ground turkey for a healthier option.
