Easy Homemade Chicken Pot Pie Casserole

This comforting casserole combines tender chicken, hearty vegetables, and a creamy filling topped with warm biscuit dough.

Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup biscuit dough

Instructions

  1. Combine the cooked chicken, mixed vegetables, cream of chicken soup, chicken broth, onion powder, garlic powder, thyme, salt, and pepper in a slow cooker. Stir until well mixed.
  2. Cover and cook on low for 240-360 minutes or high for 120-180 minutes until heated through.
  3. Drop spoonfuls of biscuit dough over the top of the mixture about 30 minutes before serving.
  4. Cover and cook until the biscuits are golden brown and cooked through.
  5. Serve warm and enjoy your comforting meal.

Notes

Use leftover rotisserie chicken to save time. Adjust the vegetables according to your preference. Check on the biscuits frequently to avoid overcooking.
