Easy Street Corn Chicken Bowl

A quick and simple meal featuring chicken, corn, rice, and fresh veggies with a lime and cilantro touch.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper, to taste
  • Olive oil, for drizzling

Instructions

  1. Combine the shredded chicken, corn, cooked rice, and black beans in a large bowl.
  2. Add the diced avocado and cherry tomatoes to the mixture.
  3. Drizzle with olive oil and lime juice.
  4. Season with salt, pepper, and fresh cilantro.
  5. Toss everything gently until well combined.
  6. Serve immediately or store in meal prep containers for later.

Notes

Serve warm or at room temperature. To keep avocado fresh, add it just before eating.
