Easy Street Corn Chicken Bowl

A delicious and hearty meal combining shredded chicken, corn, and fresh veggies, perfect for busy weeknights.

  • 2 cups cooked shredded chicken
  • 1 can corn, drained
  • 1 red bell pepper, diced
  • 1 cup black beans, drained and rinsed
  • 1 cup cooked rice
  • 1/2 cup diced tomatoes
  • 1 avocado, sliced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the shredded chicken, corn, red bell pepper, black beans, and cooked rice.
  2. Stir in the diced tomatoes and lime juice.
  3. Season with salt and pepper to taste.

Use pre-cooked chicken to save time. Store-bought rotisserie chicken works perfectly.
