Easy Taco Casserole

A quick and tasty taco casserole that the whole family will love, using everyday ingredients and just one dish for easy cleanup.

Ingredients

  • 1 pound (450g) ground beef
  • 1 packet (approx. 1 oz / 28g) taco seasoning
  • 1/2 cup (120ml) water
  • 1 (10 ounce / 280g) can diced tomatoes and green chilies, undrained
  • 1 (15 ounce / 425g) can black beans, rinsed and drained
  • 1 (15 ounce / 425g) can corn, drained
  • 810 flour tortillas, cut into bite-sized pieces
  • 2 cups (220g) shredded cheddar cheese
  • Optional toppings: sour cream, salsa, guacamole, chopped cilantro

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Brown the ground beef in a large skillet over medium heat. Drain off any excess grease.
  3. Stir in the taco seasoning and water. Bring this mix to a simmer and cook for about 5 minutes, or until it thickens slightly.
  4. Add the diced tomatoes and green chilies, black beans, and corn to the skillet. Mix well.
  5. Spread a thin layer of the beef mixture across the bottom of a 9×13 inch baking dish.
  6. Top with pieces of tortilla and sprinkle with cheese. Repeat the layers until all ingredients are used, finishing with a layer of cheese on top.
  7. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Let the casserole stand for a few minutes before serving, and add optional toppings.

Notes

Feel free to add more veggies like bell peppers or zucchini for added nutrition. You can also make it a vegetarian dish by omitting ground beef and adding more beans or vegetables.
