Fluffy Sheet Pan Pancakes

A fun and easy way to make pancakes for a crowd. Bake a whole batch in the oven without the hassle of flipping individual pancakes.

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 cups milk
  • 4 large eggs
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries (e.g., blueberries, strawberries)
  • Syrup and whipped cream for topping

Instructions

  1. Preheat your oven to 425°F (220°C) and grease a large baking sheet.
  2. Whisk together the flour, sugar, baking powder, and salt in a large bowl.
  3. Combine the milk, eggs, melted butter, and vanilla in another bowl. Mix this with the dry ingredients until just combined.
  4. Fold in the mixed berries gently.
  5. Pour the batter onto the prepared baking sheet in an even layer.
  6. Bake for 15-20 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
  7. Let cool slightly, slice, and serve with syrup and whipped cream on top.

Notes

Make sure not to overmix the batter; it’s okay if it’s a little lumpy. Experiment with toppings like chocolate chips, nuts, or other fruits.
