Garlic Parmesan Chicken and Potatoes

  • 4 medium potatoes, diced
  • 1/4 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine olive oil, garlic, Parmesan cheese, Italian seasoning, salt, and pepper in a large bowl.
  3. Add the chicken and potatoes to the bowl and toss until well coated.
  4. Spread the chicken and potatoes in a single layer on a baking sheet.
  5. Bake for 25-30 minutes or until the chicken is cooked through and the potatoes are golden brown.
  6. Garnish with fresh parsley if desired and serve hot.
