Gluten Free Lemon Brownies

Deliciously chewy and citrusy gluten-free brownies perfect for any occasion.

  • 1 cup almond flour
  • 1 cup coconut flour
  • 1 cup granulated sugar
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup coconut oil, melted
  • 4 large eggs
  • Zest of 2 lemons
  • ½ cup fresh lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking dish or line it with parchment paper.
  2. In a large mixing bowl, combine the almond flour, coconut flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the melted coconut oil, eggs, lemon zest, lemon juice, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. Pour the batter into the prepared baking dish and spread it evenly.
  6. Bake for about 25-30 minutes or until the edges are golden and a toothpick inserted into the center comes out clean.
  7. Let the brownies cool in the pan before cutting them into squares.

Notes

Dust with powdered sugar before serving; pairs well with fresh berries or dairy-free ice cream.
