Gourmet Brownie Cookies combine the rich, fudgy goodness of brownies with the crispiness of cookies. Easy to make and deliciously satisfying.

  • 0.5 cup unsalted butter (Melted)
  • 1 cup granulated sugar
  • 2 large eggs (Room temperature)
  • 1 teaspoon vanilla extract
  • 0.33 cup unsweetened cocoa powder
  • 0.5 cup all-purpose flour
  • 0.25 teaspoon salt
  • 0.25 teaspoon baking powder
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine melted butter and sugar in a mixing bowl. Mix until well blended.
  3. Add in the eggs one by one, then stir in the vanilla extract.
  4. Whisk together cocoa powder, flour, salt, and baking powder in another bowl.
  5. Slowly add the dry ingredients to the wet mixture and stir until combined.
  6. Fold in the chocolate chips.
  7. Drop tablespoon-sized amounts of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes, or until the edges are set and the centers look slightly soft.
  9. Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

Make sure to let the melted butter cool before mixing to avoid cooking the eggs. For chewier cookies, chill the dough for 30 minutes before baking.
