Greek Cucumber Salad

A simple, fresh salad combining crunchy cucumbers, sweet tomatoes, briny feta, and bright lemon for a refreshing dish.

Ingredients

  • 2 cups Cucumber, diced
  • 1 cup Tomatoes, diced
  • 1/2 cup Red onions, diced
  • 1/4 cup Olive oil
  • 1/2 cup Feta cheese, crumbled
  • 2 tablespoons Lemon juice
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Dice the cucumber, tomatoes, and red onions.
  2. In a large bowl, combine the cucumber, tomatoes, red onions, olives, and feta.
  3. Drizzle with olive oil and lemon juice.
  4. Season with salt and pepper to taste.
  5. Toss gently to combine and serve chilled.

Notes

Chill the salad for 10-15 minutes before serving to allow the flavors to meld. Store in an airtight container and use within 2 days for best texture.
