Greek Yogurt Lemon Cheesecake Bars

Delightful cheesecake bars with a creamy and tangy flavor, using Greek yogurt for a healthier twist.

Ingredients

  • 1 ½ cups Greek yogurt
  • 1 cup cream cheese
  • ½ cup sugar or sweetener of choice
  • 2 large eggs
  • 1 tablespoon lemon zest
  • ½ cup lemon juice
  • 1 teaspoon vanilla extract
  • 10 graham cracker sheets, crushed
  • 2 tablespoons melted butter

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. Combine crushed graham crackers with melted butter and press the mixture into the bottom of the baking dish to form a crust.
  3. Mix together Greek yogurt, cream cheese, sugar, eggs, lemon zest, lemon juice, and vanilla extract until smooth.
  4. Pour the cheesecake mixture over the crust in the baking dish.
  5. Bake for 25-30 minutes or until set.
  6. Allow to cool, then refrigerate for at least 2 hours before cutting into bars.
  7. Serve chilled and enjoy!

Notes

Use fresh lemon juice and zest for the best flavor. Make sure cream cheese is at room temperature for easier mixing.
