Grilled Seafood Skewers

Delicious and healthy grilled seafood skewers that combine shrimp, scallops, and firm white fish with fresh vegetables, perfect for summer cookouts.

  • 1 lb shrimp, peeled and deveined
  • 1 lb scallops
  • 1 lb firm white fish (e.g., swordfish, halibut) cut into chunks
  • 1 red bell pepper, cut into squares
  • 1 green bell pepper, cut into squares
  • 1 red onion, cut into squares
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Wooden or metal skewers

Instructions

  1. Soak wooden skewers in water for at least 30 minutes if using. Preheat the grill to medium-high heat.
  2. Combine olive oil, lemon juice, garlic, salt, and pepper in a bowl. Add shrimp, scallops, and fish chunks; toss to coat.
  3. Thread seafood and vegetables onto skewers, alternating between them.
  4. Grill the skewers for about 2-3 minutes per side, or until seafood is cooked through and vegetables are charred.
  5. Serve immediately with additional lemon wedges.

Notes

Don’t overcrowd the skewers; leave space between pieces for even cooking. Try marinating seafood for added flavor.
