Ground Beef Zucchini Boats

Delicious and nutritious zucchini boats filled with ground beef and topped with melted cheese.

Ingredients

  • 4 medium zucchinis
  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup marinara sauce
  • 1 cup shredded cheese (e.g., mozzarella or cheddar)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the center to create boats.
  3. In a skillet, brown the ground beef with chopped onion and minced garlic over medium heat.
  4. Add Italian seasoning, salt, pepper, and marinara sauce to the beef mixture, stirring well.
  5. Spoon the beef mixture into the hollowed-out zucchinis.
  6. Top with shredded cheese.
  7. Place the zucchini boats in a baking dish and cover with foil.
  8. Bake for 25-30 minutes, then remove the foil and bake for an additional 10 minutes, until the cheese is melted and bubbly.
  9. Serve hot.

Notes

These zucchini boats are best served straight out of the oven. Pair them with a fresh salad or some crusty bread.
