Healthy Chicken & Sweet Potato Rice Bowl

A filling and healthy rice bowl featuring seasoned chicken, roasted sweet potatoes, and rice, perfect for lunch or dinner.

  • 2 Chicken breasts
  • 2 Sweet potatoes
  • 1 cup Rice (white or brown)
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 cup Vegetable broth or water
  • Optional toppings: Avocado, green onions, or nuts

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes. Toss them with olive oil, salt, pepper, and paprika. Spread on a baking sheet and roast for about 25-30 minutes until tender.
  3. Cook the rice according to package instructions, using vegetable broth for added flavor if desired.
  4. Season the chicken breasts with olive oil, salt, pepper, and garlic powder. Grill or pan-fry over medium heat until cooked through, about 6-8 minutes per side.
  5. Assemble the bowls by layering the cooked rice, roasted sweet potatoes, and sliced chicken.
  6. Add any optional toppings and serve warm.

Notes

Cool the food to room temperature before storing. Store in the fridge for up to 3-4 days, or freeze portions for up to 2 months.
