Instructions

  1. Preheat the grill to medium-high heat.
  2. Toss the chicken breasts with olive oil, salt, and pepper in a bowl.
  3. Grill the chicken for about 6-7 minutes on each side or until fully cooked. Let it rest for a few minutes and then slice it.
  4. Steam or sauté the broccoli florets until they are bright green and tender-crisp.
  5. Mix Greek yogurt, minced garlic, lemon juice, dried herbs, salt, and pepper in a small bowl to make the creamy garlic sauce.
  6. Layer cooked quinoa or rice (if using), grilled chicken, and broccoli in bowls. Drizzle with creamy garlic sauce and serve.
