Hobo Casserole with Ground Beef

A cozy and filling casserole made with ground beef, potatoes, and cheese, perfect for a comforting dinner.

Ingredients

  • 1 lb ground beef
  • 45 medium potatoes, thinly sliced
  • 1 onion, chopped
  • 2 cloves garlic (optional)
  • 1 can cream of mushroom soup
  • 1/2 cup milk
  • 1 cup cheddar cheese, shredded
  • Salt, to taste
  • Pepper, to taste
  • 1 tsp paprika
  • Optional extras: frozen corn, sliced mushrooms, or chopped bell pepper

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 baking dish.
  2. Brown the ground beef in a skillet over medium heat. Add chopped onion and cook until softened. If using, add garlic for the last 30 seconds. Drain any excess grease.
  3. In a bowl, mix cream of mushroom soup with milk until smooth.
  4. Layer half of the sliced potatoes in the baking dish. Season lightly with salt and pepper.
  5. Spread the cooked beef mixture over the potatoes. Add half of the soup mixture on top.
  6. Repeat with the remaining potatoes and soup mixture. Cover with foil.
  7. Bake covered for 60 minutes, then remove foil, sprinkle cheese on top, and bake uncovered for an additional 10-15 minutes until cheese is bubbly and potatoes are tender.
  8. Let it sit for 10 minutes before serving.

Notes

Great for leftovers; flavors improve after a day. You can freeze portions for later use.
