Homemade Peach Cobbler Muffins

Delicious and fluffy muffins filled with juicy peaches, perfect for breakfast, snacks, or dessert.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup milk (dairy or dairy-free)
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh or canned peaches, diced
  • 1 teaspoon ground cinnamon
  • ½ cup brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with non-stick spray.
  2. In a large bowl, mix together the flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon.
  3. In another bowl, whisk together the milk, melted butter, eggs, and vanilla extract until well combined.
  4. Slowly pour the wet ingredients into the dry ingredients, stirring just until combined. Do not overmix.
  5. Gently fold in the diced peaches.
  6. Spoon the muffin batter evenly into the prepared muffin tin, filling each cup about three-quarters full.
  7. Sprinkle brown sugar on top of each muffin for added sweetness.
  8. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  10. Serve the muffins warm or at room temperature.

Notes

For extra flavor, add a pinch of nutmeg. Store in an airtight container at room temperature for up to three days, or freeze for up to three months.
