Honey Feta Sweet Potato Rounds

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and slice the sweet potatoes into 1/2 inch thick rounds.
  3. Toss the sweet potato rounds with olive oil, salt, and pepper in a large bowl.
  4. Arrange the sweet potato rounds on a baking sheet in a single layer.
  5. Roast in the preheated oven for about 25-30 minutes or until tender and golden, flipping halfway through.
  6. Remove from the oven and drizzle with honey and sprinkle with crumbled feta cheese.
