Honey Lime Chicken Avocado

A quick and fresh dish featuring honey glazed chicken, creamy avocado, and rice, perfect for weeknight dinners.

  • 4 pieces Boneless, Skinless Chicken Breasts (Thighs can also be used.)
  • 3 tablespoons Honey (Can substitute with maple syrup.)
  • 2 tablespoons Lime Juice (Fresh lime preferred.)
  • 1 tablespoon Lime Zest
  • 2 tablespoons Olive Oil (Avocado oil is a substitute.)
  • 2 cloves Garlic (Minced, fresh preferred.)
  • 1 teaspoon Cumin (Can substitute with coriander.)
  • 1 teaspoon Smoked Paprika (Regular paprika can be used.)
  • to taste Salt
  • to taste Pepper
  • 2 cups Cooked Jasmine or Basmati Rice (Cauliflower rice can be used for low-carb.)
  • 1 medium Ripe Avocado (Ensure it’s ripe.)
  • 1 tablespoon Extra Lime Juice
  • 1 tablespoon Olive Oil
  • to taste Fresh Cilantro or Parsley (For garnish.)
  • to taste Chili Flakes (For heat.)
  • 1 tablespoon Toasted Sesame Seeds (For garnish.)

Instructions

  1. Mix the marinade by combining honey, lime juice, lime zest, olive oil, minced garlic, cumin, smoked paprika, salt, and pepper in a bowl.
  2. Marinate the chicken by putting it in the marinade for 15-30 minutes.
  3. Cook the chicken in a skillet over medium heat for 6-8 minutes per side until done.
  4. Rest the chicken for 5 minutes and then slice or chop.
  5. Make the avocado by mashing it with extra lime juice, olive oil, salt, and pepper until slightly chunky.
  6. Serve by placing rice on a plate, adding sliced chicken, and spooning the avocado on top. Garnish with cilantro, chili flakes, and toasted sesame seeds.

Notes

Use fresh lime juice for the best flavor. Store chicken and rice in an airtight container in the fridge for up to 3 days.
