Delicious Honey Lime Chicken & Avocado Rice Stack

A fresh and easy dish featuring honey-lime chicken layered over creamy avocado rice.

  • 1 lb chicken breasts (boneless, skinless)
  • 1/4 cup honey
  • 2 limes (juiced)
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper (to taste)
  • 1 cup rice (uncooked)
  • 1 avocado (diced)
  • 1/2 cup cilantro (chopped)
  • 1/4 cup sour cream

Instructions

  1. Mix the marinade and coat the chicken. Let it sit at least 30 minutes.
  2. Cook the rice and let it cool a bit.
  3. Grill or pan-sear the chicken until cooked through, then let it rest and slice.
  4. Gently fold avocado, cilantro, and sour cream into the rice to make it creamy.
  5. Spoon the avocado rice on a plate, place sliced chicken on top, and finish with extra lime juice.

Notes

Marinate the chicken for at least 30 minutes for more flavor. Use slightly cooled rice so the avocado does not get mushy.
