Honey Roasted Carrots

Sweet and tender honey roasted carrots that add color and flavor to any meal, simple to prepare and cook on a single tray.

Ingredients

  • 1 pound of carrots, peeled and cut into sticks
  • 2 tablespoons of honey
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix the honey, olive oil, salt, and pepper in a large bowl.
  3. Add the carrot sticks to the bowl and toss until they are well coated.
  4. Spread the carrots out in a single layer on a baking sheet.
  5. Roast in the preheated oven for 20-25 minutes or until tender and caramelized, stirring halfway through.
  6. Remove from the oven and garnish with fresh parsley if desired.
  7. Serve warm.

Notes

For best results, cut carrots into similar size sticks for even cooking and do not crowd the pan.
