Lemon Crumb Bars

A bright and buttery dessert that’s easy to make, featuring a crumbly topping and a zesty lemon filling.

  • 1 1/2 cups all purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup cold butter, cubed
  • 2 large eggs
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 tablespoon cornstarch (or flour)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 or 9×9 pan with parchment paper.
  2. In a mixing bowl, combine the flour, granulated sugar, brown sugar, salt, and baking powder.
  3. Add the cold butter cubes to the dry ingredients and work it in until you get a crumbly mixture with some pea-sized bits of butter remaining.
  4. Press about two-thirds of the crumb mixture into the lined pan to form the crust. Bake until lightly golden.
  5. While the crust is baking, whisk together the sugar and cornstarch in a bowl. Then add the eggs, lemon juice, and lemon zest, whisking until smooth.
  6. Pour the filling over the warm crust and sprinkle the remaining crumb mixture on top.
  7. Bake until the center is set but still slightly wobbly.
  8. Let the bars cool completely before slicing. For cleaner slices, chill them in the fridge for a bit.

Notes

For extra flavor, consider adding a pinch of vanilla or some shredded coconut in the topping. Using freshly squeezed lemon juice enhances the flavor markedly.
