Italian Lemon Chicken Pasta

A delightful dish featuring the tangy zest of lemon combined with savory chicken and pasta, perfect for a weeknight dinner.

  • 8 oz pasta (spaghetti or linguine)
  • 1 lb chicken breast, diced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1 cup chicken broth
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add diced chicken and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
  3. Add minced garlic and sauté for 1 minute until fragrant.
  4. Pour in chicken broth, lemon juice, and lemon zest; bring to a simmer.
  5. Add cherry tomatoes and cook for an additional 3-4 minutes until softened.
  6. Toss in the cooked pasta, mixing until well coated.
  7. Stir in fresh parsley and adjust seasoning with salt and pepper.
  8. Serve warm, topped with grated Parmesan cheese if desired.

Notes

For best results, use fresh lemon juice and do not overcook the pasta.
