Italian Peach Cookies

  • 1 cup butter (softened)
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 1 cup peach preserves
  • 1 teaspoon cinnamon

Instructions

  1. Prepare the dough: In a large bowl, mix the softened butter and sugar until light and fluffy. Add in the eggs and vanilla extract, mixing well. In another bowl, combine the flour, baking powder, salt, and cinnamon. Gradually add the dry ingredients to the wet ingredients until the dough forms.
  2. Form and bake cookies: Preheat the oven to 350°F (175°C). Take small pieces of dough and roll them into balls. Place them on a baking sheet lined with parchment paper. Make a small indent in the center of each ball using your thumb. Fill each indent with a small amount of peach preserves. Bake for 15-20 minutes or until the edges are slightly golden. Allow the cookies to cool completely before serving.

Notes

Store cookies in an airtight container at room temperature for up to a week or freeze for three months. Experiment with different fruit preserves for variety.
